Sweet, moist vanilla cake is spiced with the warming flavors of cinnamon, nutmeg, and allspice and mixed with chopped apples. Another layer of cinnamon-flavored apples on top makes this dessert (or breakfast!) both beautiful and delicious!
I love birthdays. ALL birthdays. Mine, my friends’, Jesus’, random strangers – anyone. Because it’s an excuse to bake! And drink! And go to brunch! All of my favorite things.
So when my roommate’s boyfriend, Mitch, celebrated his birthday right before New Year’s, I jumped at the opportunity to bake.
Lexi and Mitch have been dating for over a year now, and I like to take full responsibility for setting up their relationships. Here’s how it went down:
1) Jesse and roommates decide to throw Halloween party.
2) Jesse invites boy who she’s been on 4 dates with and tells him to bring friends.
3) Boy brings one friend, who arrives dressed as a shadow in a full black morph suit, face covered and all.
4) Shadow boy meets Lexi, removes his mask once we move over to Local 16, and they fall madly in love.
The rest, as they say, is history! And, as for me and that boy… well that didn’t end particularly well, because he is a doucheface.
Now, while I resent Mitch at times for stealing Lexi away from me on the weekends (I need her, damnit!), I must say he’s a pretty cool guy. And he has also been begging me for months to make an apple cake. So, what better way to celebrate his birthday?
So, happy birthday, Mitch! You’re an old fart now. I hope you enjoyed your cake! And I hope you all make this, readers – I didn’t taste any because it has dairy in it, but it got rave reviews from the birthday boy himself!
Spiced Apple Cake
To make this cake, you will need:
– 2 1/4 c unbleached all-purpose flour
– 1 t baking soda
– 2 t baking powder
– 1 t cinnamon
– 1/2 t nutmeg
– 1/2 t allspice
– Pinch salt
– 1 cup granulated sugar
– 1/2 c light brown sugar
– 3/4 c (1.5 sticks) unsalted butter, softened
– 1 c sour cream
– 2 eggs
– 2 t vanilla extract
– 1/4 c water
– 1 small apple, diced
– 3 small apples, sliced thinly
– Juice of 1/2 orange
– 1 T granulated sugar
– 1 t cinnamon
Your first (and most daunting) step is to cut the apples! One of them will be diced into tiny cubes to go inside the cake (easy peasy), and the other 3 will be sliced finely to adorn the top of the cake (scary, but surprisingly easy!). I recommend peeling the apples before you slice them. Once that’s done, toss the sliced apples with the fresh orange juice, sugar, and cinnamon. Set aside.
Preheat your oven to 350F, and spray an 8-inch springform pan with cooking spray. In a small bowl, whisk together your flour, baking soda, baking powder, cinnamon, nutmeg, allspice, and salt. Set aside.
In a large bowl, cream together your butter, granulated sugar, and brown sugar. Beat with a hand or stand mixer until light and fluffy, then beat in the eggs one at a time. Add the sour cream, vanilla extract, and water, and continue to beat until fully combined.
Fold the dry ingredients into the wet just until no streaks of flour remain. Fold in the diced apples, then pour the batter into the springform pan. Arrange the diced apples on top of the batter in whatever beautiful pattern suits your fancy, then pop in the oven for 65-75 minutes, until a toothpick inserted into the center of the cake comes out clean.
Let cool, remove from the springform, and serve! For an extra special touch, you can sprinkle the top with powdered sugar – but I didn’t do that. Plain and simple wins the race?
