Y’all, I think we can all agree that the DMV is the worst. place. on. EARTH.
…so, when I walked by my car the other day to find a notice sandwiched between my windshield and wipers, my heart jumped into my throat.
But – but I have a residential parking permit! And my registration is up-to-date! And I don’t have any offensive bumper stickers, like the one on the car next to me that says “Honk if you WANNA FUCK!” What could I have possibly done wrong?!
Have a car registered in Virginia – that’s what. Turns out the District does not take too kindly to cars with the audacity to claim residency in Virginia. I stood there, staring blankly into the abyss, ignoring the rat beginning to chew on my shoelace, knowing one thing – I needed to go to the DMV.
And there was no way in hell I was going to sit in line for God knows how many hours unfed. Enter – this banana bread.
Did people stare at me as I unwrapped this delectable loaf? Yes.
Did they salivate? Of course.
Did I get a contact high from being in proximity of the Rhode Island Ave metro station? You betcha.
But, I survived! My Kindle, this banana bread, and the ability to turn a blind eye to curious onlookers were the recipe for making my trip to the DMV a success – until I was called up and realized I had forgotten my Social Security Card. AHHHH.
Better luck tomorrow? I should probably make some more bread.
Chocolate Swirl Banana Bread
To make this bread, you will need:
– 2 cups unbleached all-purpose flour
– 3/4 t baking soda
– Pinch salt
– 3/4 cup granulated sugar
– 6 T butter, browned
– 1/4 cup low-fat buttermilk
– 2 eggs
– 1 t vanilla extract
– 3 over-ripe bananas
– 3/4 cup semi-sweet chocolate chips
First, preheat your oven to 350F. In a small bowl, whisk together your flour, baking soda, and salt. Set aside.
Measure your chocolate chips out into a microwave-safe bowl. Microwave in 30-second increments, staring between, until smooth. If your chocolate is too thick or tacky, adding some cream will help improve the texture. Set aside to let cool.
Next, it’s time to brown our butter! In a saucepan over medium heat, melt the butter, stirring frequently, until it passes the foaming stage and begins to turn amber at the bottom of the pan. Remove from heat, transfer to another bowl, and let cool.
Peel your bananas and place them in a medium bowl. Using a fork, mash until there are no chunks remaining. Add the sugar, vanilla, buttermilk, and melted butter, and combine well. Mix in the eggs.
Add the dry mixture into the wet mixture, stirring just until no streaks of flour remain. Scoop 1 cup of the batter into a separate bowl, and add the melted chocolate. Stir together until fully combined.
Spray a 9×5 loaf pan with cooking spray. Add alternating dollops of the plain and chocolate batter until it is all used. Using a knife, create swirls in the batter until it is fully marbled. Bake for 50-55 minutes, until a toothpick inserted in the center comes out clean.
Once the bread has cooled, run a knife around the edges and gently remove the loaf from the pan. Slice and enjoy!
