Roasted Garlic and Vegetable Pizza

A crispy, herb-studded pizza crust is topped with plenty of tomato sauce and roasted garlic, onions, and tomatoes. Add mountains of fresh mozzarella and parmesan cheese, and you have a delicious, homemade pizza that is ready to eat in just 30 minutes! An impressive weeknight dinner, even if you don’t have anyone to impress *shrugs*.

I love my roommates dearly, but only getting to see them on the weekends has been really difficult, especially for a social animal like me! And, don’t get me wrong – I love those weeknights where I get to stay in, pop an episode of ‘Don’t Trust the B—in Apt 23’ on the Chromecast, and drink my weight in wine. But cooking for one leaves a little a lot to be desired.

You know the feeling. You buy a big bunch of kale, telling yourself you’ll eat the whole thing, but with no one to share it with AND no one to make sure you actually have vegetables for dinner instead of just cheese, it ends up withering away in the back of the fridge for weeks, until Poison Control sends you a notice about an odd odor emanating from your home.

Then, when you finally do muster up the willpower to cook a meal for yourself, you wind up with such a large quantity of leftovers that you are forced to eat the same meal for the next forty* days.

*ish.

Thus, when my roommate Lexi got put on a project where she would be working from home for four months, I jumped for joy and immediately started plotting all the dinners we would cook together. Zucchini pastas! Lasagnas! Stir fries! TACOS!

And pizza. ALWAYS pizza.

We started our pizza journey with this roasted veggie pie, which combines all of our favorite things (bread, sauce, cheese) for a fraction of the price of ordering in from Papa John’s. Served alongside a double-discounted bottle of red wine (thanks Target!), we had a meal for the ages.

Or at least for a night.

Seriously, though, you should make this feed more than two people. Your stomach will thank you.

Roasted Garlic and Vegetable Pizza

To make this pizza, you will need:
– 1 recipe pizza dough (I used a basil dough that I bought at Giant, but you can make your own if you’re feeling ambitious!)
– Olive Oil, to drizzle
– 1.5 cups tomato sauce of your choice
– 3 oz parmesan cheese, grated
– 3 oz mozzarella cheese
– 1 tomato
– 1/2 red onion
– 2 cloves garlic

First up, yo’ll roast your vegetables and garlic. Preheat your oven to 400F and line a baking sheet with foil. Spray the foil with cooking spray.

Chop your red onion and tomato into rings, and arrange them on the baking sheet, along with the whole cloves of garlic. Drizzle with olive oil. Bake these for 10 minutes, then remove the pan from the oven. Mince your roasted garlic, and set these aside.

Now, increase the temperature of your oven to 500F (aka the surface of the sun) and line a separate baking sheet with parchment paper. Roll out your pizza dough on a floured surface until it’s kinda-rectangle-shaped-ish.* Place the dough onto the parchment paper, and brush with olive oil.

*I’m a hot mess.

On top of the dough, layer your sauce, roasted vegetables, and cheeses (ALL OF THE CHEESES). Pop this guy into the oven for 8-12 minutes, until the crust is browned and the cheese is bubbly. Voila! You’ve made a pizza!

If you serve this without wine, you’re doing a disservice to yourself and everyone around you. You wouldn’t want that, now, would you?!
