A soft snickerdoodle cookie is rolled in a sweet cinnamon sugar mixture, and filled with a sea-salt caramel for a fun surprise! This cookie is sure to garner praise from all audiences.
I’m about to say something REALLY surprising. Like, hold onto your bags of cheetos, ladies and gents – shit’s about to get real.
I have… a… sweet tooth.
Oh yes, Michelle. It’s true. And it goes WAY back. My dad loves* to tell the story of how I used to roll my gum in sugar when it lost its flavor. Gross. I’m fairly certain my parents were the least responsible guardians in the world for allowing me to do this. And for allowing me to roam the woods near my house by myself. And for allowing me near my brother, like, ever. Ok, maybe I was just a bad child.
*My dad does NOT love telling the story of how, when I was but a wee infant, he dropped a heavy-ass snowglobe on my head, leaving me wailing, and somewhat of a dent. This may explain my rebellious childhood. I WILL get my revenge someday, father.
Aaaaanyway, I have naturally always been attracted to the snickerdoodle as a cookie option. Like, take an already sweet cookie, and roll it in even more sugar?? Sign. Me. Up.
When I was going to a work friend’s game night this past week, I knew I needed to bake something, and snickerdoodles called out to me. Quite literally – my jumbo, Costco-sized container of cinnamon (#blessed) JUMPED OUT OF MY PANTRY at me when I was just innocently trying to obtain some Nutella for my snacking pleasure. I quickly located my Ouija board, held a seance to banish the ghost living inside my cinnamon container, and got to baking.
However, located conveniently right behind the Nutella, I had also spotted a forgotten container of TJ’s ‘Fleur de Sel Caramels.’ And, if something’s fancy enough to have all those French words and jank, how could you NOT bake with it? Right.
I decided to whip up my standard snickerdoodle dough, toss one of these bad boys into the center of each cookie, and see what would happen!
And, JUST like me on the karaoke mic,* magic happened.
*Nope. Not even close.
Salted Caramel-Filled Snickerdoodles
To make these cookies, you will need:
– 1/2 cup (1 stick) unsalted butter, softened
– 1 egg
– 1/2 cup granulated sugar
– Scant 1/4 cup light brown sugar, not packed
– 1 t vanilla extract
– 1 1/4 cup all-purpose flour
– 1 t cream of tartar
– 1/2 t cinnamon
– 1/2 t baking soda
– Pinch salt
– 12 fleur de sel caramels
First, whisk together your flour, cream of tartar, cinnamon, baking soda, and salt in a medium bowl. Set aside.
Next, you will mix together your butter and sugars until well-combined. Add in the egg and vanilla and mix until uniform. Finally, stir in the dry mixture until just combined. This will be very dry and crumbly – no worries! Turn the dough out of the bowl, wrap it in plastic wrap, and set it in the fridge to chill for about 30 minutes. Preheat your oven to 350F while you wait for the dough to chill.
Now, the fun part! Taking a lump of dough that is about 2 Tablespoons, roll it into a little ball as so…
Now, split it in half, and press half a caramel into each side of the lil’ dough ball…
Then, press the ball back together, and roll it in a combination of 1/4 cup granulated sugar and 1 t cinnamon…
Then, repeat with the rest of the dough! Spread them out on a baking sheet lined with parchment paper (or Silpat), and bake for 10-11 minutes, until golden brown around the edges. Allow them to cool on the baking sheet for 2 minutes, then transfer them to a cooling rack (and try not to eat all of them in the process… self control, y’all).
Voila! Look at that caramel filling. What’s that, you said? Not enough? Ok, you asked…
So, in conclusion, I was a child idiot. All those years I was rolling my gum in sugar when I could have been rolling my COOKIES in sugar?? Who even raised me?!
